    Of ancient tradition, the conservation of the snow-ice of the ice boxes was widespread in the Mediterranean South in the seventeenth and eighteenth centuries. A cooler is usually in the form of a large circular and buried room, sometimes built of cut stone, surmounted by a dome pierced by an oculus forming a circular well serving as an access. The ice is stored there until the summer, after having been accumulated in the winter, transported in canvas bags, on the backs of mules then transferred on wagons in the plain.
