The coolers of Castelnau-le-Lez are a discreet and fragile heritage. Yet they bear witness to a trade that was once very present in the seventeenth and eighteenth centuries, but has now disappeared: that of ice.
This activity reveals the technical know-how of the time, lifestyles, food practices, forms of sociability, social hierarchies, as well as the place of luxury and the art of receiving.
Come and discover the history of this trade and that of the coolers of Castelnau-le-Lez.
